Ingredients

For the Sweet Balls:

  • 1 cup Javvarusi (Sago/Tapioca pearls)

  • Hot water (to soak the Javvarusi)

  • 1 cup shredded coconut

  • 1 cup cane jaggery (adjust sweetness to taste)

  • 2 tbsp ghee

  • 10-12 cashews, chopped

For Sweet Coconut Milk:

  • 1 cup shredded coconut

  • 1/2 cup cane jaggery (or as per your taste)

  • 1-2 cups water (for extracting coconut milk)

How to Make Javvarusi Sweet Balls

Step 1: Soften the Javvarusi

Start by soaking the Javvarusi in hot water for 15-25 minutes until soft and plump. Drain any excess water and set it aside.

Step 2: Prepare the Coconut Poornam (Stuffing)

  1. Heat 2 tablespoons of ghee in a pan.

  2. Add chopped cashews and roast them until golden brown. Remove and set aside.

  3. In the same pan, add shredded coconut and cane jaggery. Stir over medium heat until the jaggery melts and combines with the coconut, forming a thick mixture.

  4. Add the roasted cashews and mix well. Allow the mixture to cool before using.

Step 3: Extract Sweet Coconut Milk

  1. Blend the shredded coconut with 1-2 cups of water to make a smooth mixture.

  2. Strain it using a muslin cloth or fine sieve to extract fresh coconut milk.

  3. Sweeten the coconut milk by adding cane jaggery. Stir until the jaggery dissolves completely. Adjust the sweetness as needed.

Step 4: Assemble the Sweet Balls

  1. Take a small portion of the softened Javvarusi and flatten it in your palm.

  2. Place a spoonful of the coconut poornam in the center and carefully wrap the Javvarusi around it, shaping it into a ball. Repeat for the remaining mixture.

Step 5: Steam Cook the Sweet Balls

  1. Arrange the balls in a steamer and cook them for 15 minutes until firm.

  2. Once cooked, let them cool slightly.

Step 6: Serve with Sweet Coconut Milk

  1. Soak the steamed sweet balls in the prepared sweet coconut milk for a few minutes.

  2. Serve warm or chilled for an indulgent dessert experience.
